Author of The Natural Foods Cookbook (1961) and The Natural Foods Primer (1972), Mrs. Hunter capsulizes her twenty years experience working with natural foods in these "mini how-to" programs. - Program Description
Beatrice Trum Hunter shows some of the many uses of the soybean - sprouted in a salad, baked in a casserole, toasted as nibbles. Soy grits and soy flour are used in baked goods, and soy oil is good for a salad dressing. Fermented soybean products include tamari (like Worcestershire sauce) and miso (a soy paste for soup stock and casseroles). Beatrice Trum Hunter demonstrates how to make tofu - a cheese made from soy flour.
